October has arrived and there’s a familiar aroma floating in the air. An aroma of homemade baked goodies so mmmm mmmm goood!! THE SPICE OF LIFE - Vanilla Beans
I love Vanilla. I’m one of those foodies who prefers to use a Double-Strength (commercial) grade extract, or that extra splash, in baked or cooked dishes. I make no apologies for doing so, and I have a great appreciation for the Vanilla Beans. Madagascar and Reunion origin Bourbon beans, which account for about 75% of world production, are used for most extracts. They are excellent for all purposes. Favor is full and robust.
Mexican bean/extract has a heavier, creamy taste with a Kaluah-like aroma. This variety has an excellent affinity with coffee and chocolate flavored baked goods and dishes. Best usage is for flavoring shorter-cooking or cold-prepared foods like vanilla yogurt.
